Pumpkin Soup Provencal

Ingredients:

  • 2 1/4 lbs pumpkin
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 3 1/2 oz rice
  • 1 tsp salt
  • 1 1/4 cups milk

Directions:

  1. Prepare pumpkin into cubes.
  2. Heat oil and add onion.
  3. Let it cook for about 4 minutes.
  4. Add garlic and thyme and let it cook another minute before adding pumpkin, broth, bay leave and half of the rice.
  5. Boil up the soup and let it simmer for about 35 minutes.
  6. In the meantime, prepare rest of the rice as normal or indicated.
  7. Mash the soup and add rest of rice, milk and taste with nutmeg pepper and salt.
  8. Serve with croutons and thyme.
