Ingredients:

  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups oil
  • 2 cups canned pumpkin ( reserve 3 tbsp for glaze)
  • 3 cups flour
  • 1 1/2 tbsp cinnamon
  • 1 1/2 tsp ground ginger
  • 1 tsp salt
  • 6 tbsp butter (softend)
  • 3 tbsp pumpkin
  • 2 1/2 tbsp icing sugar
  • 1 pinch salt
  • 3/4 tsp cinnamon
  • 3 tbsp milk
  • 1 1/2 tsp vanilla

Directions:

  1. Mix dry ingredients together and in separate bowl mix wet ingredients together and pour wet into dry, do not over mix or loaves will be heavy, ( batter will be thick).
  2. Spray pans with cooking spray.
  3. Divid batter into two pans
  4. Bake at 350 degrees for 50-60 minute.
  5. Remove from pans and while still warm but not hot spread glaze over top.
  6. Slice and enjoy.
