Pumpkin Banana Bread

Ingredients:

  • 1 large ripe banana
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 lb tofu (soft or medium)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/2 cup walnuts (optional)

Directions:

  1. Mix first 5 ingredients in a blender.
  2. Whisk the dry ingredients together in a bowl.
  3. Mix the wet and dry ingredients until moist. pour into greased loaf pan ( i use pam). bake for 40-45 mintues or until toothpick inserted in the middle comes out clean. let cool for 1/2 hour. remove from pan and let cool on wire rack.
