Pumpkin Banana Bread

low fat, low cholesterol and DELICIOUS! i made a bowl of cream cheese frosting for people to slather on if they'd like.
Ingredients:
1 large ripe banana
1 cup pumpkin puree
1/2 cup sugar
1 teaspoon vanilla
1 lb tofu (soft or medium)
1 cup whole wheat flour
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 cup walnuts (optional)
Directions:
1. mix first 5 ingredients in a blender.
2. whisk the dry ingredients together in a bowl.
3. mix the wet and dry ingredients until moist. pour into greased loaf pan ( i use pam). bake for 40-45 mintues or until toothpick inserted in the middle comes out clean. let cool for 1/2 hour. remove from pan and let cool on wire rack.
