Potatoes With Balsamic Vinegar

Ingredients:

Directions:

  1. Scrub the potatoes with a brush under cold running water; peel them if desired.
  2. Cut the potatoes into halves or quarters if large.
  3. Heat the oil in a saucepan over medium heat; add in the potatoes, onion, water, and salt and pepper to taste.
  4. Cover the pan and decrease the heat to low; cook 20 minutes or until the potatoes are tender.
  5. Uncover the pan and stir in the vinegar; cook until most of the liquid evaporates, about 5 minutes.
  6. Serve hot or at room temperature.
