Ingredients:

Directions:

  1. Preheat oven to 350F.
  2. Line a rectangular roasting pan with aluminum foil and drizzle veg oil in the pan, about 1 oz
  3. Wash and cube potatoes. Make the cubes about 1/4 inch square
  4. Put cubes in the pan and toss them with your hands to coat them with oil
  5. Chop the pepper and onion into pieces the same size as the potato cubes (or smaller, if you prefer)
  6. Add them to the pan and mix them in with the potatoes by hand to coat them with veg oil (add a little more oil if needed)
  7. Sprinkle with a little salt
  8. Bake for 30 min or until potatoes are tender and browned. You can gently toss the potatoes 10 minutes into the baking time to evenly brown all of them.
  9. This dish goes great with sausage or ham.
  10. P.S. Yesterday I made this and added some cubed sliced corned beef and it made great corned beef hash.
