Potatoes Con Queso....for those who are riced out!

Ingredients:

Directions:

  1. A 2 quart Pyrex is recommended.
  2. Melt butter in a medium pan over low heat.
  3. Add flour, whisking until smooth.
  4. Cook 1 minute.
  5. Gradually add milk and cook until smooth (whisking constantly until slighly thickened).
  6. Stir in 1& 1/2 cups cheese.
  7. Remove from heat and stir until cheese melts.
  8. Add pimiento, green chiles, jalapeno, salt and stir well.
  9. Place half of potato slices in a lightly greased 2 quart baking dish.
  10. Top with half of cheese mixture and repeat layers.
  11. Bake COVERED at 350 for 20 minutes.
  12. Uncover and bake for 40 more minutes.
  13. Sprinkle with remaining cheese and heat until the cheese melts and is lightly brown on top!
  14. Enjoy something different (unless someone already posted it, I looked but may have missed it!).
