Potato Salad With Julienne of Ham

Ingredients:

  • 10 medium potatoes , cooked till tender and cubed
  • 1 tsp salt
  • 3/4 cup olive oil
  • 1/4 cup mayonnaise
  • 1/2 lb ham , cut into thin julienne strips
  • 6 gherkins, well drained and cut into thin julienne strips

Directions:

  1. Combine salt, peper, vinegar, mustard and oil. Toss the potatoes, while still warm, in this mixture. Allow to sit for a few hours.
  2. Add mayonaise and toss to mix.
  3. Add ham and gherkins.
  4. Sprinkle with chives.
