Potato Salad With Julienne of Ham

the perfect salad for a BBQ or picnic.
Ingredients:
10 medium potatoes, cooked till tender and cubed
1 teaspoon salt
1/2 teaspoon black pepper, freshly ground
1/3 cup white wine vinegar
1 teaspoon dry mustard
3/4 cup olive oil
1/4 cup mayonnaise
1/2 lb ham, cut into thin julienne strips
6 gherkins, well drained and cut into thin julienne strips
1/4 cup fresh chives, chopped
Directions:
1. Combine salt, peper, vinegar, mustard and oil. Toss the potatoes, while still warm, in this mixture. Allow to sit for a few hours.
2. Add mayonaise and toss to mix.
3. Add ham and gherkins.
4. Sprinkle with chives.
