  1. Sauté onion in butter in a Dutch oven until tender. Add tomatoes, potatoes, chicken broth, salt, pepper, and paprika. Cook over medium heat, uncovered, 30 minutes or until potatoes are tender, stirring occasionally. Sprinkle with parsley, if desired.
