Potato Leek Soup

Ingredients:

  • 1/2 tbsp olive oil
  • 1 clove garlic
  • 1 cup celery
  • 2 lbs potatoes
  • 1/2 tsp black pepper
  • 1 cup 2% milk

Directions:

  1. Saute garlic and celery in olive oil until celery is tender.
  2. Add leeks. Saute for a few minutes.
  3. Add pepper and chicken broth.
  4. Add potatoes.
  5. Cook until potatoes are tender.
  6. Blend in food processor. Add milk.
