Potato Leek Soup

Ingredients:

Directions:

  1. Slice the white sections of each leek and then cut the slices into half moon shapes. Rinse thoroughly to remove dirt.
  2. Peel and cut the potatoes into cubes.
  3. Place leeks and potatoes into a large pot and cover with water.
  4. Cover pot and let cook over medium/high heat until potatoes and leeks are tender.
  5. Add bouillon cubes and stir.
  6. Remove from heat and pour into blender.
  7. Blend at medium/high speed until the soup is smooth and creamy. Serve.
