Potato, Leek and Broccoli Soup with Curry

Ingredients:

  • 2 tbsp margarine
  • 2 medium potatoes
  • 4 garlic cloves
  • 1 cup 1% milk
  • 1 pinch salt

Directions:

  1. Halve the leeks, lengthwise and soak in a few changes of water to remove sand. Remove most of the green part and separate the rest, then slice crosswise and drain. Peel and chop the garlic cloves. Heat the margarine in a skillet or in the soup pot. Sweat the leeks and the garlic, on very low, while you do the rest of the recipe.
  2. Peel the potatoes and cut into chunks. In another pot, bring the stock to a boil, drop in the potato chunks and cook for about 10 minutes. Cut the broccoli into florettes and chop the stems. After the 10 minutes, add the broccoli to the potatoes. Cook for another 5 to 10 minutes. Let this cool a bit and put it through a food processor or a large blender in batches until it is all smooth. Add it to the leek and garlic mixture. Add the curry and salt to taste. Add the milk and re-heat - do not boil. This is a very satisfying soup with a great flavour. THIS IS A WELL TESTED RECIPE.
