Potato and Broccoli Dijon

Ingredients:

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray a shallow baking pan with nonstick cooking spray.
  3. Place cooked broccoli in a medium bowl.
  4. In a small bowl or custard cup, combine mayonnaise and mustard.
  5. Add to broccoli, along with cheese.
  6. Mix well.
  7. Make a lengthwise slit in each potato.
  8. Squeeze the ends, making an opening in the top of each one.
  9. Divide broccoli mixture evenly and pile on top of each potato.
  10. Place potatoes in prepared baking pan.
  11. Bake, uncovered, 15 to 20 minutes, until cheese is hot and bubbly.
