Ingredients:

  • 1 bag pork roast

Directions:

  1. CIDER-MARINATED PORK LOIN
  2. Pound pork loin
  3. Cups fresh apple cider
  4. Tbls grated ginger
  5. Tsp crushed red pepper flakes
  6. Tsp juniper berries
  7. Tbls maple syrup
  8. /4 cup soy sauce
  9. Tsp salt
  10. Clove of garlic sliced
  11. Combine all ingredients in a snap tight plastic bag or container.
  12. Add the pork loin. Allow the pork to marinate overnight.
  13. Heat grill on high and mark the pork loin.
  14. Reduce the heat to low and cook the pork loin on the grill covered for about 15-20 minutes, until a meat thermometer shows 135 degrees.
  15. Allow the pork to rest for about 10-15 minutes. Slice and serve.
  16. APPLE AND BLUE CHEESE SALAD
  17. Tbls white vinegar
  18. Tbls extra virgin olive oil
  19. Tbls honey
  20. Tbls shallot (minced)
  21. Tsp fresh thyme leaves
  22. Blue cheese (crumbled)
  23. /4 cup cured Virginia ham
  24. Locally grown apples
