Plum Cobbler With Cornmeal Topping

Ingredients:

Directions:

  1. Wash plums, dry, pit and cut into small cubes
  2. Mix sugar and cronstarch and mix into plums,
  3. Add vanilla and set aside for 10 minutes.
  4. Make topping.
  5. Into a large bowl combine sugar, flour , salt and baking powder.
  6. Cut in cubed cold butter or margarine into a crumb like mixture as for pie dough
  7. Add enough liquid to make a moist dough that clings together, but may be a bit sticky.
  8. Place plums with any liquid into a 9x 13 pan.
  9. Form dumplings with hands and place evenly acrooss plums in pan.
  10. Bake in a preheated 375 oven about one hour or until topping is golden and plums juices bubble up
  11. Cool on rack about 1 hour before serving
  12. Of course serve with whipped cream, ice cream etc.
