Pizza Sauce - From Weight Watchers Cookbook

Ingredients:

  • 16 oz cherry tomatoes (about two small packages)
  • 1/4 cup onion, sliced
  • 3 cloves garlic, halved
  • 1 tbsp pepper
  • 1 tsp salt

Directions:

  1. Rinse and drain tomatoes, spread out on a cookie sheet - or in 9 x 13 baking pan.
  2. Slice onion (purple or yellow) into small wedges. Spread around tomatoes.
  3. Halve the garlic cloves and add to tomatoes and onion.
  4. Shred basil leaves and spread over mixture.
  5. Sprinkle balsamic vinegar, salt and pepper over all (I just eyeball it)
  6. Place in a preheated 325 degree oven for 20-30 minutes. Keep an eye on them - they are done when the aroma is maddening and the tomatoes are bursting open.
  7. Let cool slightly then mash the whole mixture with the potato masher and mix.
  8. Let cool if desired then spread whole mixture over pizza dough. Top and bake pizza as normal.
