Ingredients:

  1. Put a little olive oil in the bottom of a pot, enough to cover the bottom.
  2. Add the diced carrots, potatoes, garlic, and green peppers to the olive oil. Add the oregano and sazon (optional) and stir until its barely lightly browned.
  3. Add the pink beans and tomato sauce while stirring. Let simmer for a minute, then add the chicken stock. You want the chicken stock to cover everything in the pot and be about an inch or so above the ingredients in the pot.
  4. Let simmer for about 6-7 minutes or until the potatoes and carrots are cooked.
  5. Serve over rice!
