Ingredients:

Directions:

  1. Saute onions, carrots, and celery in olive oil.
  2. Add chicken stock, tomatoes, spices, beans, corn, and tortillas. Bring to boil and reduce to simmer for 20 minutes.
  3. Add chicken and milk. Reduce heat and simmer for 10 minutes. Garnish with cheddar cheese.
