Pineapple Coconut Muffins

Ingredients:

  • 1 3/4 cup. flour
  • 1/2 cup. quick oats
  • 1/2 cup. brown sugar
  • 1/2 tsp. baking soda
  • 1 1/2 cup. pineapple juice
  • 1/2 cup. applesauce
  • 1/4 cup. butter, melted
  • 1 egg
  • 1 tsp. vanilla

Directions:

  1. In a large bowl, combine first six items,
  2. In a separate bowl, blend remaining ingredients until smooth then fold into dry ingredients until just moistened.
  3. Spoon into greased mini-muffin tins.
  4. Bake at 350 degrees for 25 - 30 minutes
  5. . Makes 24 mini-muffins.
