Pineapple and Macadamia Cheese

Ingredients:

Directions:

  1. Chop nuts roughly and set 3 tablespoons aside for topping.
  2. Using a sharp knife, cut a thin top off the cheese and discard the rind.
  3. Using a teaspoon, scoop out the cheese and place in small bowl.
  4. Mix in the nuts, pineapple, cream cheese, herbs and curry powder.
  5. Stir until mixture is soft and creamy.
  6. Spoon the mixture into empty cheese shell.
  7. Sprinkle the reserved nuts on top.
  8. Serve at room temperature with crackers.
