Ingredients:

  • 1/2 tsp rum extract
  • 3-1/2 cups thawed frozen whipped topping
  • 7 oz coconut

Directions:

  1. Beat cream cheese with sugar and rum extract until smooth.
  2. Fold in 2 cups whipped topping, pineapple with syrup and 2 cups coconut.
  3. Spread in square layer pan lined with plastic wrap.
  4. Invert pan to serving plate then remove pan and plastic wrap.
  5. Spread rest of whipped topping and sprinkle with remaining coconut.
  6. Freeze until firm about 2 hours then cut in wedges to serve.
