Orange Cheesecake With Orange Caramel Sauce

Ingredients:

Directions:

  1. Position rack in center of oven then preheat to 450.
  2. Grind crackers and sugar in processor until fine crumbs form.
  3. Add butter then process until crumbs are slightly moist.
  4. Press onto bottom of spring form pan with 2-1/2” sides.
  5. Bake until set about 12 minutes then transfer to rack and cool completely.
  6. Maintain oven temperature.
  7. Beat cream cheese and sugar in large bowl until smooth.
  8. Add eggs, liqueur, peel and vanilla then beat just until blended.
  9. Pour filling into crust lined pan and bake 15 minutes then reduce heat to 300.
  10. Bake 55 minutes longer then transfer cake to rack and run knife around sides to loosen.
  11. Cool then chill cheesecake overnight and serve with sauce.
  12. To make sauce stir sugar and water in heavy saucepan over medium low heat.
  13. Stir constantly until sugar dissolves then increase heat and boil 10 minutes.
  14. Remove from heat and gradually add cream then stir over low heat until smooth.
  15. Remove from heat and whisk in liqueur then cool completely and pour over cheesecake.
