Pico De Gallo (costa Rican Style)

Ingredients:

  • 2 big tomatoes (or 4 smaller ones on the vine)
  • 1/2 bunch of cilantro
  • 1 onion (red or white , which ever you prefer)

Directions:

  1. Dice up the tomatoes and discard the juices and seeds.
  2. Dice up the peppers (green & jalapeno) and discard the seeds.
  3. Dice up the onion.
  4. Combine the tomatoes, peppers, and onion in a large salad bowl.
  5. Take off the leaves from the stems of cilantro and mince up the leaves. You can use some of the stems if you want.
  6. Place in with the bowl mixture.
  7. Cut each lime in half and then squeeze the limes so that the juice goes all over the vegetables. If you have a citrus squeezer, this works perfectly.
  8. Dash some salt over it and then mix in. If you like, you can also put a tablespoon or two of apple cider vinegar in to give it a little kick. Whatever is left over, cover and place in fridge. It tastes better when left overnight to marinate.
