Ingredients:

  • 1 cup water
  • 3 tbsp brown sugar
  • 1 tsp salt
  • 1 tsp peppercorn
  • 4 medium red onions, sliced very thinly

Directions:

  1. Bring a kettle of water to a boil.
  2. In a bowl, combine the vinegar, water, sugar, salt and pepercorns.
  3. Stir until the sugar is dissolved.
  4. Place onion slices in a colander.
  5. Pour boiling water over the onion slices and drain well.
  6. (This wilts the onions slightly and allows them to absorb the marinade).
  7. Transfer the onions to the bowl with marinade and mix to coat the onions thoroughly.
  8. Cover and marinate several hours or overnight in the refrigerator.
