Pepper And Garlic Potatoes

Ingredients:

  • 12 to 15 small white or red (new) potatoes, (do not remove skin but do scrub clean) and halved
  • 1 stick plus 3 tbsp butter
  • 6 to 8 cloves garlic, minced
  • salt to taste
  • 1 tbsp olive oil

Directions:

  1. Boil potatoes until tender(about 10 to 12 minutes)
  2. Drain and set aside
  3. In skillet, saute garlic and green onions in butter and oil for 2 to 3 minutes over med. low heat
  4. Place potatoes in serving bowl
  5. Toss in butter garlic sauce and parsley
  6. Season with salt and cracked pepper
  7. Serve warm or can be refrigerated and used for potato salad
