Ingredients:

Directions:

  1. Cook salt pork in large heavy pot over moderate heat until crisp.
  2. Remove with a slotted spoon and reserve.
  3. In remaining fat cook onion and flour until onion is tender but not browned about 5 minutes.
  4. Add parsnips and potatoes stirring to coat well and cook 5 minutes.
  5. Add water then bring to a boil and simmer covered 30 minutes.
  6. Add milk and spinach then bring to a boil and serve garnished with reserved salt pork.
