Ingredients:

  • 1 -2 lb stew meat
  • 6 medium potatoes
  • 6 -8 medium carrots
  • 1 -2 onion
  • 2 tbsp salt
  • 6 tbsp sugar
  • 6 tbsp tapioca
  • 1 (32 oz) can v8 vegetable juice

Directions:

  1. Place stew meat in bottom of large dutch oven.
  2. Peel and quarter potatoes.
  3. Layer potatoes on top of stew meat.
  4. Peel carrots and cut into sticks.
  5. Layer carrots on top of potatoes.
  6. Thinly slice onions and layer on top of carrots.
  7. Sprinkle salt, sugar, and tapioca over onions.
  8. Pour V-8 over all.
  9. Cover and cook at 300 degrees for 4 hours, or until potatoes are tender.
  10. Serve on plates, spooning sauce over potatoes, meat, and carrots.
