Oven Baked Sweet Potatoes With Lime Dip

Ingredients:

Directions:

  1. Preheat oven to 450 degrees and line a baking sheet with parchment paper.
  2. Cut potatoes crosswise on a slight angle into 3/8 inch slices.
  3. Cut each slice lengthwise into 1/4 inch-wide sticks.
  4. In mixing bowl combine sticks with evoo and salt.
  5. Spread sticks in a single layer on baking sheet.
  6. Roast 20 minutes.
  7. Flip sticks over and bake another 15-20 minutes or until fries are browned.
  8. To make dip:.
  9. Combine all ingredients into small bowl, whisking to blend.
  10. Let sit for 10 - 15 minutes.
