Ingredients:

  • 1 salt
  • 1/4 cup flour
  • 1/2 cup corn meal

Directions:

  1. Cut the okra into 1/2 pieces, wash, and drain well.
  2. Add salt and pepper to taste.
  3. Sprinkle with the flour and corn meal. Stir to coat the okra.
  4. Spray cookie sheets with the oil.
  5. Place the okra in a single layer on the sheet.
  6. Bake in a 350 degree oven until it is brown and slightly crispy. Stir a couple of times to make sure it is browning evenly. Spray with more oil if it seems to be sticking.
