Oven Apple Pancakes With Cider Sauce

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 4 eggs
  • 2 1/2 cups milk
  • put all ingredients in blender and whirl until smooth.
  • preheat oven to 425. preheat 6 6 cast iron skillets in hot oven for 3 minutes.
  • remove and spray with pam. divide batter among 6 skillets and bake for 20 minutes.
  • remove pancakes from skillet, top with apples and cider sauce. serves 6.
  • melt 1 tbsp of butter in a skillet. peel and slice 4 apples. fry apples in butter, adding brown sugar, cloves and cinnamon to taste.

Directions:

  1. Cider Sauce:
  2. 1 cup sugar
  3. 2 tablespoons cornstarch
  4. 1/2 teaspoon pumpkin pie spice
  5. 2 cups apple cider
  6. 2 tablespoons lemon juice
  7. 1/4 cup butter
  8. Mix sugar, cornstarch and pie spice in a saucepan. Stir in cider and lemon juice. Cook, stirring constantly, until thickens and boils. Boil and stir for 2 minutes, remove from heat and add butter.
