Ingredients:

Directions:

  1. Bring 6 cups water with 2 tablespoons salt to a boil.
  2. Stir in the orzo and cook it for 6-8 minutes and drain.
  3. In a large skillet, cook the onions in the olive oil until they are limp and tender, stirring often. Do not brown.
  4. Add the tomatoes and mint and cook for a minute or so.
  5. Add the orzo, parsley, lemon juice and salt and pepper to taste. Cook stirring 1-2 minutes or until orzo is heated through.
  6. Serve hot.
