Orange Cappuccino Quick Bread

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease (or spray with nonstick cooking spray) one 8 x 4-inch loaf pan.
  3. If greasing pan, dust with flour and tap out excess.
  4. On a cutting board or plate, remove peel from orange.
  5. In a medium saucepan, heat half-and-half over high heat just until it bubbles around the edge of pan.
  6. Remove from heat.
  7. Stir in orange peel and instant coffee or espresso powder.
  8. Let stand for 10 minutes.
  9. Discard peel.
  10. In a large mixing bowl, mix together flour, brown sugar, baking powder, cinnamon, and salt.
  11. Set this mixture aside.
  12. Stir together coffee mixture, oil, eggs, and vanilla in a separate small mixing bowl.
  13. Make a well in the center of the flour mixture.
  14. Add the coffee mixture all-at-once to the well, tossing with a fork just until dry ingredients are moistened.
  15. (Do not over-mix.)
  16. Spoon batter into prepared loaf pan.
  17. Bake in preheated oven until a toothpick inserted into center comes out clean-approximately 60 to 65 minutes.
  18. Carefully remove from oven and place on hot pad on counter top to cool slightly.
  19. Loosen loaf by running spatula or knife around sides of pan.
  20. Turn loaf out onto baking rack to cool.
