One Egg Banana Bread

Ingredients:

  • 3 large well-ripened bananas, mashed
  • 1 egg
  • 1 stick of butter, melted
  • 1 1/2 cup of flour
  • 1 cup of sugar
  • 1 tsp salt
  • 1 cup nuts, optional (i use whole pecans and set on top of bread. this causes the pecans to toast and gives the bread an added kick)

Directions:

  1. Mix all ingredients in a mixing bowl; pour into a well greased loaf pan.
  2. Bake at 350 for about 60 minutes, or until knife or toothpick inserted in middle comes out clean.
