Ingredients:

  • 1/2 tsp. baking powder
  • 1/2 cup butter or margarine
  • 1 tsp. flour
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/3 tsp. pepper
  • 1/2 lb. sausage
  • 2 eggs beaten with 1/3 cup milk

Directions:

  1. Cook sausage and onion seasoned with salt, pepper, garlic powder and sage. Set aside.
  2. Cook grits according to pkg. directions with the baking powder added to the water.
  3. Add beaten eggs.
  4. Stir in margarine, flour, sugar, salt and pepper.
  5. Mix well.
  6. Cook 15 minutes more.
  7. Stir in sausage and onion mixture.
  8. Pour the grits mixture into a well greased loaf pan, and cover with plastic wrap.
  9. Refrigerate overnight.
  10. Cut grits into slices, dredge in flour and dip in egg mixture.
  11. Fry grits in a 300 skillet with margarine or butter for 10 minutes on each side. If you have any leftover egg just add to skillet and cook.
