Ingredients:

Directions:

  1. Soap samp and beans seperately, for about 45 minutes
  2. Meanwhile, heat oil in a deep pan
  3. Saute onions over a low heat until sweet
  4. Add garlic and continue cooking over a low heat
  5. Drain both samp and beans, reserving the liquid from the samp
  6. Add to the pan and turn up the heat slightly
  7. Keep adding just enough water as it evaporates from the mixture and keep stirring (as if you're making risotto :) )
  8. You will notice the starch coming off the mixture making it creamy
  9. Add the walnuts and cook for another 10 minutes
  10. Serve with some good sausage and a green salad
