Ingredients:

  • 2 tbsp sugar
  • 1 tsp salt
  • 2 eggs
  • 2 cups buttermilk
  • for the lemon sauce
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1/8 tsp salt
  • 2 tbsp butter
  • 2 tbsp lemon juice

Directions:

  1. Combine flour, rolled oats, baking powder, baking soda, sugar and salt
  2. Combine eggs, oil and buttermilk
  3. Add liquid ingredients to dry and mix only until blended
  4. Cook pancakes on hot, lightly oiled griddle
  5. Serve with hot maple syrup, honey-butter or lemon sauce
  6. Instructions for Lemon Sauce
  7. Mix sugar, constarch and salt
  8. Add boiling water slowly stirring constantly
  9. Boil for 5 minutes
  10. Take from heat and add butter, lemon juice and egg yolk
