Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Place onion and garlic in food processor and pulse until finely chopped. Transfer to large bowl. Add ground chuck, 1/4 cup of ketchup, eggs, salt and pepper to onion and garlic mixture.
  3. Process chopped bacon and white bread in food processor until bread is chopped. Add bread mixture to meat mixture. Add parsley and gently mix with hands to blend well.
  4. LIne a 9X5 loaf pan with plastic wrap allowing a 2 border of plastic to hang over sides of pan. Fill loaf pan with meat mixture, smoothing top of loaf. Flip loaf pan over to remove meatloaf onto a foil-lined shallow baking pan. Remove plastic wrap from meat loaf.
  5. Top meatloaf with three remaining slices of bacon and brush entire loaf with remaining ketchup.
  6. Bake uncovered for one hour. Allow meatloaf to rest for 20 minutes after removing from oven.
