My Carrot Bread

Ingredients:

  • 2 cups flour
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 1/2 cup currants ( raisins)
  • 1/2 cup coconut
  • 1/2 cup nuts
  • 1 cup canola oil
  • 3 eggs

Directions:

  1. Preheat oven to 350.
  2. Mix dry ingredients.
  3. Add currants, coconut and nuts. Mix.
  4. Mix oil and carrots and add to dry. Mix.
  5. Put in loaf pan (or any shape you want). Let it stand for 20 minutes.
  6. Bake 1 hour.
  7. Cool and remove from pan.
  8. Keeps for 2 weeks.
