Ingredients:

  • 3 cups sifted flour
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups sugar
  • 1 1/4 cups oil
  • 1 tsp vanilla
  • 4 eggs
  • 1 cup raisins (optional)
  • 1/2 cup walnuts (optional)
  • 1 (8 oz) package cream cheese, softened
  • 2 1/4 cups powdered sugar
  • 1/2 tsp vanilla
  • 1/2 cup nuts, chopped (optional)

Directions:

  1. Beat sugar, oil, and vanilla together.
  2. Thoroughly beat in eggs one at a time. Add dry ingredients, alternately with carrots.
  3. Put in 13x9x2- inches baking pan.
  4. Bake at 350 degrees about 40 minutes.
  5. FROSTING.
  6. Blend frosting ingredients and frost cake. That’s it!
