  1. Cook veggies until soft and dry on medium-high heat. Turn down heat to low and allow to cool a few minutes before adding egg and cheese mixture. Cook covered until bottom is set ~3-4 minutes, flip pan and cook a few more minutes. Low heat prevents a brown crust.
