Ingredients:

  • 2 large eggs
  • 1/2 tsp salt
  • 1-1/2 cups matzo meal
  • 1 cup water or milk or 1/2 cup and 1/2 cup milk
  • 1 tsp cinnamon
  • note: i sometimes add peeled and finely diced apple or prunes.

Directions:

  1. Preheat oven to 350 degrees F.
  2. Beat eggs with salt and water or milk or both.
  3. Stir in matzo meal and blend until smooth.
  4. Add granulated sugar and cinnamon.
  5. Grease muffin tins.
  6. Pour batter into muffin tins and bake for 30 minutes.
  7. Makes approximately 8-10 muffins, depending on the size of muffin tins that you use.
