Moose Steak with Mushroom Sauce

Ingredients:

Directions:

  1. Heat the bacon drippings in a large skillet and brown the steak on both sides, thoroughly.
  2. Add the broth, onion, garlic, and tomato paste diluted in the water or sherry.
  3. Cover the pan and simmer for 1 hour or until the meat is tender.
  4. Remove the steak from the pan and keep hot.
  5. Add the mushrooms to the pan liquid; cover and simmer for 1 minute.
  6. Thicken with flour and water mixture.
  7. Dilute with the cream.
  8. Heat thoroughly.
  9. Taste for seasoning and pour over the steak.
  10. Sprinkle with the paprika.
