Mom's Turkey Soup

Ingredients:

  • turkey carcass
  • 3 celery ribs
  • 1 cup rice or 1 cup barley
  • 1 tsp italian seasoning
  • salt and pepper

Directions:

  1. Put turkey carcass put in a large pot.
  2. Take one carrot and one celery stalk and one onion cut in to large pieces put in the pot.
  3. Add enough water to cover the carcass.
  4. Bring to boil then turn it down to a simmer.
  5. Cook for 2 hours.
  6. Take the carcass and all the vegetables out of the stock.
  7. Return stock to the pot.
  8. Dice all the carrots, celery and onion put in pot.
  9. Cook on low for 20 minutes.
  10. Add the Turkey meat and Italian seasoning.
  11. Add barley or rice (noodles).
  12. Cook until the rice or barley is tender (according to the box).
  13. Enjoy.
