Mixed Greens Frittata

Ingredients:

  • 4 tsp olive oil
  • 8 cups mixed greens, torn in bite sized pieces (kale, chard, spinach)
  • 2 eggs
  • 1 tbsp flour
  • 1/2 tsp salt

Directions:

  1. In a large broiler-proof nonstick skillet, heat 2 teaspoons of the oil over moderate heat. Add garlic and cook for 2 minutes.
  2. Add the greens and cook, stirring often for 7 minutes or until very tender.
  3. Transfer the greens to a plate and wipe out the skillet.
  4. In a food processor, combine the eggs, cottage cheese, Parmesan, flour and salt.
  5. Add the remaining oil to the skillet and heat over moderate heat.
  6. Add the greens, pour the egg mixture over and cook without stirring for 10 minutes or until the eggs are set around the edges and slightly wobbly in the center.
  7. Preheat the broiler. Broil the frittata 6 inches from the heat for 1 minute or until the center is just set.
