Marti's Homemade Noodles

Ingredients:

  • 1 egg
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1 cup flour

Directions:

  1. Beat egg.
  2. Combine egg, salt, 2T milk.
  3. Add enough flour to make a stiff dough.
  4. Roll very thin on a floured surface.
  5. Let stand 20 minutes.
  6. Roll up and slice 1/8 inch thick. (Use a very sharp knife and sprinkle more flour to keep from sticking.).
  7. Spread out and dry 2 hours.
  8. Drop into boiling soup and cook 10 minutes.
  9. Makes 3 cups uncooked noodles.
  10. To freeze: Lay out noodles on a baking sheet (instead of drying on the counter) Place in freezer until solid. Place in freezer bags. Seal, label and freeze.
  11. To serve: Drop frozen noodles into boiling liquid. Cook for 10 minutes, stirring once in a while.
