Marinated Roasted Peppers

Ingredients:

  • 1/4 cup olive oil
  • 2 tbsp. vinegar
  • 1/2 teasp. spice islands pasta and pizza italian blend spice mix
  • ( this comes in a disposable grinder) set on medium- fine
  • salt and pepper to taste

Directions:

  1. Brush pepper halves with some olive oil
  2. Place halves cut side down on an unheated reck of a broiler pan
  3. Flatten slightly, splitting if necessary
  4. Broil 3 inches from the heat until surfaces are charred
  5. Place peppers in a brown papper bag .. let cool
  6. Removed charred skins..discard.
  7. Cut into strips
  8. In a medium bowl ;combine the 1/4 cup olive oil, vinegar, and seasonings... mix well
  9. Add peppers cover and refrigerate for at least 2 hours or up to 24
