Ingredients:

  • 1 1/2 cups whole wheat flour
  • 3/4 tsp salt
  • 1 3/4 cups milk
  • 1/3 cup maple syrup
  • 1 large egg

Directions:

  1. Combine the whole wheat flour, all purpose flour, baking powder, and salt in a large bowl.
  2. Whisk to blend thoroughly.
  3. In a separate bowl, whisk together the milk, maple syrup, egg, and the melted butter.
  4. Make a well in the dry ingredients and pour in the egg mixture.
  5. Stir until well moistened.
  6. The batter will contain some lumps.
  7. Set the batter aside.
  8. Place griddle over medium heat.
  9. Brush the surface with vegetable oil or rub with a strip of uncooked bacon as the griddle warms.
  10. When the griddle is hot, stir the batter, adding more milk if necessary to create a consistency like thick heavy cream.
  11. Since the batter is thick only take up about 1/4 cup of the batter when pouring onto the hot griddle.
  12. Cook until the bubbles that have formed around the outside edge are broken.
  13. Turn pancakes over and cook the other side.
  14. Stir in additional milk as needed to maintain a pourable consistency.
