Ingredients:

Directions:

  1. Cook the potatoes stove top until they are done. They will fall off a knife when they are done.
  2. While the potatoes are cooking diced the onions and mix in a large bowl with the parsley, salt and pepper. I typically use about 3-4 T of parsley, but I love it.
  3. When potatoes are done drain and run cold water over them for a few minutes
  4. With a potato masher mash and mix the potatoes in the large bowl with onion, and parsley.
  5. Mix in mustard and mayonnaise to taste
  6. Garnish with parsley and paprika
  7. For a little bit of a kick I sometimes use only 2 T or Mustard and 1T of dijon mustard.
