Mama T's Make a Meal of Twice Baked Potatoes

Ingredients:

Directions:

  1. Preheat oven to 425.
  2. Bake potatoes until soft on the inside.
  3. Remove potatoes from the oven, cut just enough of the top off of the potato to access the inside.
  4. Remove all the insides and dump into a large mixing bow, add milk and butter.
  5. Mix with mixer until all lumps are removed, salt and pepper to taste.
  6. Heat oil in a skillet until hot; add mushrooms, onion, garlic and broccoli, sauté until tender.
  7. Fold mushroom mix, bacon, and chicken into mashed potatoes.
  8. Take the potato, mushroom mix and stuff it into the potato skins.
  9. Once the potatoes are stuffed, place back cookie sheet and bake in oven at 325 for 30 minutes.
  10. Remove from oven top generously with cheddar cheese, return to over for 5 minutes or until cheese is melted. Remove and serve.
